Now and annual event, Juliet Bateman from Over the Moon in Albany is returning to Balingup this weekend to teach the art of cheese making!. A couple of our guests are attending the session and they are in for a real treat!
Juliet is a true artisan. She has carefully chosen her herd (and named each of the girls individually) for their ability to produce the best milk for specific cheese types. Her Swiss Browns and Jerseys are certainly not famous for producing the largest volumes of milk, but the milk is outstanding, and the final product speaks for itself.
Her cheese is hand made with her premium milk from her family owned farm. Over the Moon is one of only four organic cheese makers in Australia that keep their own herd exclusively for the purpose of making their cheeses. The paddock, dairy and cheese factory are all within meters of each other! Rare conditions which provide the artisan the opportunity to make a truly full flavoured product.
Over two days, they will learn how to make camembert, yoghurt, labna, butter, mozzarella and mascarpone. Juliet will also conduct a specific camembert tasting and education segment. They’ll be doing cheese tastings of different cheese classifications, and she’ll teach the art of cheese fondue making! Delicious!
